Cauliflower is a great vegetable with many uses and year-round availability. In this post we'll tell you how to make a quick and easy side dish.
Cut one head of cauliflower into florets, then slice them in half and spread evenly on a shallow baking dish.
Add sliced red onion. Sprinkle with regular or Kosher salt (sea salt is great too).
Toss with 2-3 tablespoons of olive oil.
If you love a bit of garlic, dice a clove and toss into the mix.
Roast at 450, tossing occasionally, for 20-30 minutes, until golden in color and slightly tender. Remove pan and sprinkle with grated parmesean. Roast for about 10 more minutes.
Of course you can substitute many different cheeses. Just make sure it's freshly grated for the best taste!
